The gentle smoked duck dish can be found in Rancajawat Village Hall Block, RT 05 RW 02, Tukdana District, Indramayu Regency. But for those who do not like duck, there are also village chicken, broiler chicken, entog and tuna fish. The cooking process is the same, that is, smoked in a cauldron.

To get an appetizing dish, duck (chicken/entog/fish) is cooked with abundant local herbs. The cooking process also requires patience and thoroughness. The process begins with preparing the duck ready to cook. Next, the duck is smeared with a special seasoning of spices and marinated for an hour so that the marinade is perfectly absorbed.

Next, the duck is again watered with spice sauce so that it makes its taste even more delicious. After that, the duck is smoked by a unique method, that is, it is put in a tile on a small burning wood so that the poultry cooks slowly and evenly.

The fumigation process lasts up to an hour. With that gentle smoke process, the duck meat becomes very tender and juicy. Nevertheless, it retains a slightly crunchy texture on the outside.

In addition to the taste, the long fumigation process also makes the cooked duck more naturally preserved.

Asap Gentong's business owner, Darni, revealed that the business idea came about after he traveled as a migrant worker in Beijing. Starting from her desire to fulfill her longing to enjoy smoked chicken in Beijing, she tried to create similar recipes that she remembered to a close to authentic taste.

Darni's use of tentong in the manufacture of smoked ducks was done by Darni by accident. In order to evenly ripen the roasted poultry, he looked at the tile in his yard. Since then, Darni has used gentong as his cooking medium. He then determined to open the venture. “Use the name 'Asap Gentong',” Darni, more commonly known as Mimi Ardi, said Sunday (29/9/2024).

In business since 2023, Darni's Asap Gentong continues to attract the attention of foodies until now viral on social media. Because, she attracted Asap Gentong fans through Facebook under the account name Mimi Ardi.

Starting from his home kitchen, Asap Gentong's business is marketed from friends, neighbors, until now it can reach a wider range of customers. Moreover, at present, he has resellers in different regions of Indramayu District.

“For foodies, this gentle smoked poultry dish is not only about enjoying food, but also diving into Indonesia's very diverse culinary culture. And surely this comes from Indramayu,” Darni said.
