REPUBLIKA.CO.ID, JAKARTA -- A total of 30 Indonesian dishes must be taught in all tourism schools in Indonesia. Director of MICE and Special Interest Tourism Development in Ministry of Tourism and Creative Economy Achyaruddin explained that it aimed to standardize Indonesian culinary nomenclature, recipes and culinary process through a kitchen test.
"It also an effort to develop Indonesian cuisine in the world and preserving our traditional culinary riches," Achyaruddin said recently.
What are the 30 Indonesian dishes? They are Asinan jakarta (a pickled vegetable or fruit dish), Rawon surabaya ( Indonesian beef black soup), yellow rice of Yogyakarta, Nasi goreng kampung jawa (Village fried rice), Soto lamongan (Chicken noodle soup from Lamongan), Tahu telur surabaya (Chicken egg Surabaya), Gado-gado jakarta (Jakarta salad), Urap sayur yogyakarta (Vegetables in spiced grated coconut dressing), Nasi liwet solo (a Javanese coconut chicken rice), and Ayam panggang bumbu rujak yogyakarta (Yogyakarta's grilled chicken salad).
Next, Urak arik buncis solo (Solo plate - green beans and local vegetables mixed with shrimp paste and crambled eggs), Chicken soto madura, Purwakarta maranggi satay, Balinese satay wraps, Pindang pati palembang (Palembang boiled fish), Padang rendang, Galangal fried chicken from Bandung, Padang cob padeh acid, Lumpia semarang (eggroll with bamboo shoots, chicken and prawn filling), also Ice dawet ayu from Banjarnegara.
Next, Bir Pletok (traditional beer from Jakarta), Sarikayo minangkabau (steamed glutinous rice and coconut milk custard), Padang kapau (Padang style rice), Laksa bogor (spicy noodle soup from Bogor), Solo turmerick, Kolak pisang ubi bandung (sweet potato compote with banana), Manado klappertaart, Nagasari yogyakarta (rice cake filled with steamed banana), Jakarta mudcake and Surabi bandung (Bandung pancake).
